Tokyo Mart – a large Japanese supermarket located in Northbridge, Sydney, will be holding a free tasting event for sake by the Kikumasamune Shuzo Brewery from 12-noon to 4PM this Saturday the 2nd of March. There will also be a special-offer 1-day sale on all Kikumasamune products in store.

Kikumasamune Shuzo has been making traditional dry sake since 1659, using only selected rices and pure spring water.
The brewery’s rice of choice for a long time been the ‘Yamada-nishiki’ strain of rice. Yamada-nishiki is a type of sake rice, or shinpaku-mai, that is characterised by a larger grain size than standard rice varieties and a low protein content. In addition, It would be impossible to bring about the refreshing, robust flavor of their sake’s without the properties of ‘Miyamizu’ water. Firstly,  the water is extremely low in iron – an element known to the colour and flavor of the beverage. Nonetheless, whilst containing almost no iron, it is rich in minerals such as calcium, potassium, magnesium, and phosphorus. This mineral content provides nutrition for the sake yeast to grow as well as a variety of other microbes which drive a healthy, robust fermentation process to create a refreshingly dry sake as only a brewing process charged with hard water can.
