About the Symposium
On Monday, 11 November 2024, as part of the ‘Bringing Sake to the Table’ campaign, Melbourne will host an exciting event: Traditional Methods for Modern Brewing, a unique and informative Sake Symposium.
We are thrilled to welcome two distinguished guests: Soichiro Tsuji, President of Gozenshu Brewery (Tsuji Honten Co., Ltd.) from Okayama Prefecture, and Quentin Hanley, Director of Melbourne Sake. Joining them is ‘Sake Mistress’ Simone Maynard from Melbourne.
Topics of Discussion
We will begin by covering the fundamentals of sake, including its ingredients and production methods. Following that, we’ll explore how traditional brewing techniques are blended with modern technology.
A key step in the sake production process is creating the shubo (yeast starter), and among the various methods, the oldest is known as the Bodaimoto method.
Our topic, Traditional Methods for Modern Brewing, will examine the ancient techniques of Bodaimoto, delve into its rich history and the challenges it faces today, and discuss why Gozenshu Brewery remain dedicated to this traditional method.
The second segment will discuss how Melbourne Sake have applied insights from their years of research, visits and communication with breweries and brewers in Japan and other parts of the world, addressing the challenges of brewing outside Japan, the use of table rice, and the future of rice farming in Australia.
Finally, we will explore how sake can serve as a gateway for new drinkers, highlighting its versatility, and looking at styles with brighter acidity that may appeal to wine enthusiasts.
Sake & Food Pairing Experience
Attendees will enjoy a selection of small dishes paired with sake, along with a brief discussion of each pairing. The tasting sessions will feature both Gozenshu and Melbourne Sake, showcasing an array of dishes that are not typically Japanese, allowing participants to explore the diverse food pairing possibilities of sake.
Trade Show
Following the panel discussion, attendees can enjoy a wonderful selection of sake and Japanese liquor at the Trade Show, paired with a selection of dishes that highlight sake’s diverse food pairing capabilities. Exhibitors will offer tastings of their products throughout the event.

This event is held in conjunction with the Trade Show, which will take place on the same day starting at 2:00 PM. Attendance at the Trade Show is required for participation in the Symposium. If interested, please complete the online registration form by 6 PM, November 7.
